Friends of the Library – Gustavus Library Associates is a friends organization that supports the Folke Bernadotte Memorial Library at Gustavus Adolphus College, and ultimately, the students and faculty through fundraising and awareness.  Member support is crucial to providing resources, research, and technology campus-wide.  To learn more about us or to become a friend of the library, visit gustavus.edu/gla.

 

 

Join the friends of the Library – GLA for Fika with Friends on Thursday, September 27, 2018, at 10:30 a.m. in the Folke Bernadotte Memorial Library on campus.

Fika is Swedish for a coffee break that’s more about socializing than drinking coffee – and usually involves something sweet.  Enjoy a sweet treat with a friend and make your annual gift to the Friends of the Library!

There will be a short program at 11 a.m.  Library tours will be offered after the program.  Attendees will receive a 20 percent-off coupon from Swedish Kontur (valid on day of event only).

MAYDAY! was an amazing day on campus with peace activist Leymah Gbowee, 2011 winner of the Nobel Peace Prize.  She spoke to a full chapel and had a special meet-and-greet with those who attended the Friends of the Library-sponsored luncheon.

The annual MAYDAY! Peace Conference began at Gustavus in 1981 with funding by the late Florence and Raymond Sponberg.  It was established to inspire attendees to work for justice and peace throughout the world.  The 2018 conference certainly accomplished this goal.

Gustie Virtual Book Club

Enjoy a fall recipe

Gustie Gourmet II Cookbook:

 

 

SQUASH APPLE GINGER SOUP
2 small butternut squash (2 ½ pounds total)
3 T. unsalted butter
3 small Granny Smith apples, cored, peeled and chopped
1 ½ c. finely chopped onion
3 T. peeled, minced fresh ginger
2 garlic cloves, minced
6 c. vegetable stock
1 t. salt
½ t. pepper, freshly ground
½ c. whipping cream (optional)

Preheat oven to 450 degrees. Line pan with foil. Halve squash and discard seeds and fibers. Lay squash cut side down and bake until tender, 45-60 minutes.  Remove from oven and cool. Scoop out the flesh and chop. Discard the skin.

In large pot over moderate heat, melt the butter. Add apples, onion, ginger and garlic. Cook, uncovered, until lightly browned, 15-20 minutes, stirring 2-3 times.  Add stock, squash, salt and pepper and bring to a simmer. Partially cover pot and cook until apples are tender, stirring occasionally. After 30-35 minutes remove from heat and cool slightly.

Puree the soup in batches in a blender or food processor. Prepare soup a couple of days in advance for deeper flavor. Cool, cover and refrigerate.  To serve, heat gently, with optional cream. Serves 6-8
